How to Test Soft Serve Mix Viscosity [Homemade & Plant-Based]

To ensure your Taylor soft serve machine is running efficiently and producing the highest quality product, it's important to regularly test the viscosity of your mix. Below are instructions on how to test the viscosity for both gravity-style and pump-style Taylor freezers.

How to Test Mix Viscosity: Gravity Style Freezers

Prime the Freezer:

  • Sanitize your Taylor freezer thoroughly.
  • Fill the hopper halfway or more with your soft serve mix.

Prepare for Testing:

  • Insert the mix tube into the "Auto" position.
  • Place the air orifice on the tube, but do not turn the Taylor machine on yet.
  • Ensure the draw handle opens fully. Some handles may have a draw rate adjustment screw that can be fine-tuned later.

Required Tools:

  • A scale.
  • A 12–20 oz cup.

Test the Draw Rate:

  • Open the handle fully and observe the flow of the mix:
    • If the mix flows freely in a steady stream, the viscosity is correct.
    • If the product drips or stops flowing, check if the handle is opening fully.
    • If the mix does not flow freely, STOP. Reformulate the mix. Do not turn the machine to "AUTO" as this could cause mechanical issues.

Measure Viscosity:

  • Keep the freezer off and open the draw handle to dispense the unfrozen mix into the cup for 10 seconds.
  • Weigh the dispensed product. The target flow rate is 8-10 oz within those 10 seconds.

How to Test Mix Viscosity: Pump Style Freezers

Prime the Freezer:

  • Sanitize the Taylor pump-style freezer and fill the hopper halfway with your mix.

Prepare for Testing:

  • Install the mix pump but leave the mix feed tube detached from the barrel.
  • Turn on the mix pump. If the mix flows freely, you’re ready to proceed. If it doesn’t, the mix may be too thick. STOP and reformulate the mix.

Test Pump Flow:

  • Place a cup under the pump's discharge port to catch the mix. Run the pump for five cycles.
  • Weigh the mix. The amount dispensed should weigh at least 5 ounces. If it is, the viscosity is correct. If less than 5 ounces, reformulate the mix.
